Good morning beauties! I don’t know about where you are, but where I am spring has finally sprung! We have sunshine, we have warmer weather, and I am even starting to see green! Oh how I miss the colour green during the winter months….Anyway, this nice weather always brings out the energy in me (probably due to the added dose of vitamin D I lack during snowy months) and I want to keep that energy up as much as possible. Being a vegetarian, I always make sure I get adequate amounts of protein in my daily diet, but I can’t very well be munching on beans, greens, eggs, lentils etc. while on the go! So I made a quick batch of these cookie dough protein balls in two flavours- classic and chocolate peanut butter. They’re dairy free, gluten free and low in sugar. These are pretty filling so I usually only eat a couple after a workout, in the morning if I’m in a hurry, or sometimes just as a sweet snack.

Classic cookie dough balls:

Ingredients:

7 prunes (or pitted dates) soaked in water and refrigerated overnight

1 cup natural almond cashew butter

1/3 cup vanilla protein powder (I use Vega Protein & Greens)

1 tbs unsweetened almond milk

1/4 cup chocolate chips (I use Enjoy Life mini chocolate chips)

Directions: 

Using a food processor or electric mixer, combine all the ingredients (excluding the chocolate chips) until they resemble a thick cookie dough. Next stir the chocolate chips into the mixture by hand. Once combined, roll about 1.5 tbls worth of dough into a ball and place on a plate, continue until all the dough has been used. I like to either cover them with plastic wrap or put them in a container in the fridge so they keep longer.

 

                                                                                                                                     

Chocolate Peanut Butter cookie dough balls

Ingredients:

1/3 cup chocolate protein powder (Vega Protein & Green comes in chocolate too)

1 tbs chocolate almond milk

1/4 cup chocolate chips (Enjoy Life mini chocolate chips)

Using a food processor or electric mixer, combine all the ingredients (excluding the chocolate chips) until they resemble a thick cookie dough. Next stir the chocolate chips into the mixture by hand.
