Good morning, afternoon, evening or night to all of you beautiful people! I hope and pray you have/had a wonderful day today, wherever you are. My day consisted of a lot of cleaning, errand running, and an impromptu photo shoot. I’m definitely feeling the fatigue of  a productive Sunday, and with singing lessons, work and gym sessions monopolizing my time lately, I haven’y been cooking at all! The only plus I’ve gained is the extra vitamins from all of the raw fruits and veggies I’ve been snacking on; otherwise, I am missing out on some serious food blog material! That being said, I did make my go-to hot chocolate today for a morning pick me up, so I figured I would share!

This is a single cup recipe, but you can always multiply it to your desired serving amount.



  • 1 cup 2% milk
  • 1/2 cup 35% whipping cream
  • 1 tbs dark cocoa powder
  • 1 tbs granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp instant coffee (optional)
  • 1/4 cup 35% whipping cream (for whipped topping)
  • 1 tbs powdered sugar (for whipped topping)
  • 1 tsp vanilla extract (for whipped topping)

In a medium sauced pan, pour the whipping cream into the pan and bring to a simmer. Reduce heat, and add in the cocoa powder. Whisk until completely emulsified. You will have a relatively thick and dark chocolate rue. Pour in the milk and stir. Add in sugar, vanilla and coffee and continue stirring until all ingredients are blended together.

Using a stand mixer or hand mixer, mix heavy cream until soft peaks form. Add in the powdered sugar and continue stirring until the cream forms relatively stiff peaks (you want it to hold up against the hot chocolate).

Pour the hot chocolate into your favourite mug, pile some homemade whipped cream ontop, and sip away! I have used many different flavours if coffee isn’t your forte- Peppermint extract, ground cinnamon, caramel extract, orange extract, etc. Let me know what you think!
